Cassandra Hoyt

Cassandra moved to Paris in 2010 to pursue her dream of becoming a chef, formally training at l’École Ferrandi and l’École de Boulangerie et de Pâtisserie de Paris. After cooking for three-Michelin-starred kitchens such as l’Astrance and the George V, in 2017 she opened Clove Bakery, an all-American bake shop in Paris. Cassandra’s cakes and creations have appeared in Vogue, Glamour, Grazia, and Madame Figaro.

MISTAKE HOME COOKS CAN AVOID?

Using a mixing bowl that is too small. Whether you’re mixing up a batter or tossing together salad ingredients, always grab a larger bowl than the one you think you need.

TIPS FOR A CLEAN, ORGANIZED KITCHEN?

I’m a huge believer in cleaning as you go. Always start with an empty dishwasher and you can just load it as you’re cooking. Keeping a trash bowl in front of you as you work also helps.

HOW TO BALANCE FLAVORS IN DESSERTS?

One of the most important ingredients in dessert is salt! It enhances the sweetness of sugar while adding complexity and balance. Try baking with salted butter or add a sprinkle of fleur de sel on warm cookies or ice cream.
